Can someone from 'back home' please help me?
I am a NZ'er living in Canada, and need the fondant icing recipe from the Edmonds
Cookbook. I've made a traditional NZ fruit Christmas cake, but can't buy the white icing
for it here. It's the icing you roll onto the cake over top of the almond paste. I've
used the Edmonds recipe in the past, but the page I need in my old beaten up cookbook is
missing. My book was purchased around 1980, so the recipe I used was near the back of the
book. This may not be the case with newer editions,
Thanks folks....and Merry Christmas from The Great White North :-))

Receipe from New Zealand Edmonds Cookbook Edition De Luxe 1976 page 52
Fondant Icing
125g (4ozs) Liquid Glucose 1 kg (2lb) pure Icing Sugar
1.1/2 teaspoons Gelatine 2 teaspoons Glycerine
1/4 cup Cold Water

Place water and gelatine in large bowl, stand over a bowl of hot water and stir until
gelatine is dissolved Add glucose and glycerine and mix. Sieve icing sugar into a basin
leaving a "well" in the centre. Pour the liquid into the icing sugar and mix with a
wooden spoon (colouring and flavouring may be added at this stage). When it is too stiff
to mix, work with hands until it reaches a firm dough. Roll out on a plastic sheet
sprinkled with sifted icing sugar to desired shape and apply to cake which has been
moistened with eggwhite or sugar solution.

Hope this is the one you need to cover Christmas cake after almond paste.
